Golden Castle Pudding

1 Cup Flour

1 1/2tsp Baking powder

1/2tsp salt

1/2cup butter

½ cup Sugar


1tsp water

4tbs syrup/honey


Methods Creaming

1)      Preheat oven 180

2)      Line your individual ramekins or muffin pan with greaseproof paper

3)      Cream butter and sugar

4)      Add eggs

5)      Add flavoring and Syrup

6)      Add dry ingredients

7)      Add water

8)      Bake for 20 minutes


Chocolate Fudge Brownie


8tbs Butter

2 cups of the best chocolate available

1 1/2cups Sugar

3 eggs

1tsp Salt

1 ¼ cups of Flour

1/2tsp Baking Powder

1 cup Pecan Nuts


Methods Double Boiling and Tempering

1)      Preheat oven to 170

2)      On a double boiler melt your chocolate and butter, mix together until smooth

3)      Mix your Eggs, Sugar and Salt together until light

4)      Temper step 2 into step 3

5)      Add flour and Baking Powder

6)      Add Pecan Nuts

7)      Bake for 30-50 minutes


Cream Cheese Icing


1 cup Cream Cheese

1 cup Icing Sugar

1tbs Butter


Method Creaming

1)      Cream butter and icing sugar together with cream cheese until light and fluffy


Blueberry Caviar

1lt of Blueberry Juice

7g of Gelatine

1lt of Canola Oil

1 Squeezie Bottle


Methods Blooming and Spherification

1)      Put Canola Oil into the freezer until it starts going cloudy

2)      Bloom Gelatine

3)      Boil the juice down to 750ml and add the bloomed gelatine

4)      Add step 3 into your Squeezie bottle and bring to room temperature

5)      Drop the juice mixture into the cold canola oil

6)      Let this set for about an hour in the freezer and strain

7)      Rinse the caviar under slowly running cold water
