Tiramisu – An Italian Taste of Heaven

Tiramisu meaning “pick me up” or “lift me up”) is a popular coffee-flavoured Italian dessert. It is made of ladyfingers (Italian: Savoiardi) dipped in coffee, layered with a whipped mixture of egg yolks, egg whites, sugar and mascarpone cheese, flavoured with cocoa. The recipe has been adapted into many varieties of puddings, cakes and other desserts.

Ingredients
  1. 250g Mascarpone Cheese
  2. 65g Castor Sugar
  3. 30ml Brandy / Frangelico/ Amarula Liqueur
  4. 250ml Cream
  5. 500g Boudoir Biscuits / Lady Fingers
  6. 1 cup Strong Coffee / Espresso (at room temperature)
  7. 1/2 slab Dark Chocolate, shaved into small pieces
  8. 30g Cocoa, for dusting
Instructions
  1. Cream Mascarpone Cheese, Castor Sugar and Brandy/ Frangelico/ Amarula Liqueur until well combined and then set aside.
  2. Whip Cream until stiff peaks form and fold gently into the Mascarpone Cheese mixture.
  3. Dip Biscuits/ Lady Fingers in the Coffee until just wet (do not let them soak), and form a single uniform layer at the bottom of a 20cmx20cm pyrex dish. Spread half the cream mixture on top of the layer of biscuits, then sprinkle with the dark chocolate shavings. Repeat with another layer of biscuits dipped in the coffee and finish off with the remaining cream mixture.
  4. Using a sieve, dust the top layer evenly with cocoa. Cover and refrigerate for at least 4 hours, preferably overnight, before enjoying.
